Responsibilities

  • Prepare rice, sushi rolls, sashimi, and other Japanese dishes with precision
  • Carve and trim meats and fish to meet quality standards
  • Maintain rigorous food safety, sanitation, and temperature standards
  • Maintain a clean and organized workstation and manage sushi ingredient storage
  • Collaborate with kitchen and restaurant staff for timely order delivery
  • Assist with inventory management and monitor stock levels
  • Adhere to portion control guidelines to minimize waste
  • Perform opening, closing, and side work duties

Requirements

  • Minimum of 3 years of experience as a Sushi Cook or similar role
  • Excellent knife skills and proficiency in sushi preparation techniques
  • High familiarity with kitchen equipment and processes
  • Knowledge of food safety regulations and best practices
  • Active ServSafe Manager certificate
  • Ability to work in a fast-paced setting
  • Availability for evenings, weekends, and scheduled guest events
  • Ability to lift up to 40 pounds and stand for long periods
