About the role
Responsibilities
- Prepare sushi rice, sauces, garnishes, and mise en place daily
- Fabricate and portion seafood according to company standards
- Prepare nigiri, sashimi, maki, hand rolls, and specialty rolls with precision
- Maintain exceptional product quality, presentation, and freshness
- Follow standardized recipes and plating specifications
- Practice proper food handling, labeling, rotation, and sanitation procedures
- Keep the sushi station clean, organized, and service-ready
- Work efficiently with the kitchen team to ensure timely ticket execution
Requirements
- Minimum 2 years of professional sushi experience preferred
- Strong knife skills and seafood fabrication experience
- Knowledge of sushi rice preparation and traditional Japanese techniques
- Ability to work efficiently in a fast-paced, high-volume environment
- Flexible availability, including nights, weekends, and holidays
- Ability to stand for extended periods and lift up to 50 pounds
