About the role
Responsibilities
- Manage and supervise daily stewarding operations across all hotel outlets
- Ensure cleanliness and sanitation of kitchens, restaurants, banquet areas, and service areas
- Lead, train, and motivate the stewarding team to maintain high service standards
- Prepare duty rosters, schedules, and manpower allocation
- Ensure proper cleaning, handling, and maintenance of kitchen equipment and utensils
- Monitor dishwashing operations and availability of clean crockery, cutlery, and glassware
- Maintain hygiene standards as per HACCP, hotel policies, and local regulations
- Manage garbage disposal, waste segregation, and recycling procedures
- Coordinate with Kitchen, F&B Service, Housekeeping, and Engineering departments
- Monitor inventory of cleaning chemicals and stewarding supplies
- Control costs through efficient usage of supplies and reduction of wastage
- Conduct training programs on hygiene, safety, and equipment handling
Requirements
- Diploma or Bachelor's degree in Hotel Management or Hospitality Management
- Minimum 5–8 years of experience in hotel stewarding operations
- Previous experience in a 5-star hotel as Stewarding Manager or similar role preferred
- Strong knowledge of kitchen sanitation and hygiene practices
- Experience managing large stewarding teams and high-volume operations
