Stewarding Manager

Responsibilities

• Manage and supervise daily stewarding operations across all hotel outlets
• Ensure cleanliness and sanitation of kitchens, restaurants, banquet areas, and service areas
• Lead, train, and motivate the stewarding team to maintain high service standards
• Prepare duty rosters, schedules, and manpower allocation
• Ensure proper cleaning, handling, and maintenance of kitchen equipment and utensils
• Monitor dishwashing operations and availability of clean crockery, cutlery, and glassware
• Maintain hygiene standards as per HACCP, hotel policies, and local regulations
• Manage garbage disposal, waste segregation, and recycling procedures
• Coordinate with Kitchen, F&B Service, Housekeeping, and Engineering departments
• Monitor inventory of cleaning chemicals and stewarding supplies
• Control costs through efficient usage of supplies and reduction of wastage
• Conduct training programs on hygiene, safety, and equipment handling

Requirements

• Diploma or Bachelor's degree in Hotel Management or Hospitality Management
• Minimum 5–8 years of experience in hotel stewarding operations
• Previous experience in a 5-star hotel as Stewarding Manager or similar role preferred
• Strong knowledge of kitchen sanitation and hygiene practices
• Experience managing large stewarding teams and high-volume operations
