Le Carlina is a classic and refined luxury chalet hotel located in Courchevel 1850. Part of the Alp’Azur group, the hotel offers a chic, family-oriented atmosphere with a gastronomic restaurant and exceptional mountain views.
Responsibilities
- Manage mise en place and participate in culinary production
- Ensure equipment availability for smooth service
- Verify that chef-established processes and organization are respected
- Monitor team performance regarding cooking, plate cleanliness, temperature, and timing
- Ensure high standards of culinary quality and presentation
- Maintain cleanliness of the kitchen areas
- Manage kitchen closing procedures including cleaning, security, and packaging
- Control and master costs to ensure kitchen profitability
- Participate in stock management and ensure quality/quantity of supplies
- Maintain strict hygiene standards
Requirements
- Minimum 2 years of experience in a similar high-standing establishment
- Strong autonomy and discretion
- Highly organized and thoughtful approach
- Excellent communication and team player mindset
- Leadership skills with an exemplary professional image
- Perfect knowledge of all culinary roles
- Thorough knowledge and application of HACCP standards
