Sous Chef – Hot Kitchen

Responsibilities

• Assist the Head Chef in managing daily hot kitchen operations
• Supervise and guide chefs, cooks, and commis to ensure smooth workflow
• Maintain exceptional standards of food quality, taste, and presentation
• Oversee mise en place, cooking processes, and service readiness
• Ensure compliance with HACCP, hygiene, and safety regulations
• Participate in menu planning, recipe development, and costing
• Monitor stock levels, ordering, and proper storage of ingredients
• Train and mentor junior kitchen staff to enhance skills and performance
• Coordinate with other kitchen sections to ensure timely service
• Support the Head Chef in maintaining cost control and minimizing wastage

Requirements

• Minimum 2 years of experience as a Sous Chef or Senior CDP in a fine dining hot kitchen in the UAE
• Strong culinary skills with expertise in international and contemporary cuisine
• Excellent leadership, communication, and team-management abilities
• Ability to work under pressure in a high-volume, high-standard environment
• Strong understanding of food safety, hygiene, and kitchen operations
• Culinary diploma or equivalent certification preferred
