Sous Chef

Responsibilities

• Supervise and support kitchen staff during preparation and service to ensure consistency in food quality, portion control, and presentation
• Oversee daily kitchen operations to deliver timely and high-quality catering products across multiple vessels and offshore operations
• Maintain strict standards of cleanliness and food safety in line with Australian Food Safety Standards and HACCP protocols
• Assist the Catering Supervisor with stock control, ordering, inventory management, and waste minimization
• Foster a positive team culture through clear communication, leadership, and mentoring

Requirements

• Cert III in Commercial Cookery
• Driver Licence
• QLD Responsible Service of Alcohol (SITHFAB021)
• Food Safety Supervision Skill Set (SITSS00069)
• First Aid & CPR (HLTAID011)
• Blue Card (QLD Working with Children Check)
• Elements of Shipboard Safety
• Demonstrated experience in staff management and high-volume kitchen environments
