About the role
Responsibilities
- Assist the Head Chef in daily kitchen operations and food quality standards
- Oversee and manage specific kitchen sections such as sauces, fish, or pastry
- Contribute to menu planning using seasonal and local ingredients
- Train and mentor junior kitchen staff
- Maintain strict food safety and hygiene standards
- Manage inventory and minimize waste
- Collaborate with front-of-house staff for seamless service
- Participate in menu tastings and presentation refinement
Requirements
- Culinary degree or equivalent qualification
- 3-5 years of experience in fine dining or Michelin-starred restaurants
- Expertise in various kitchen stations (sauces, pastry, fish, meat)
- Advanced knowledge of culinary techniques and gastronomic trends
- Strong understanding of Irish and international cuisine
- Proficiency in menu planning and development
- Food safety and hygiene certification
- Demonstrated leadership and teamwork skills
- Ability to work under pressure in fast-paced environments
- Fluency in English
