About the role
Responsibilities
- Manage all aspects of daily kitchen operations and the kitchen brigade in the absence of the Head Chef
- Control the preparation and service of all food to ensure high standards are met
- Conduct regular inspections of the kitchen and food preparation areas
- Maintain strict control over food items, including stock rotation and portion control to minimize wastage
- Check all incoming goods against documentation for quality and quantity
- Assist in maintaining food cost percentages within the established budget
- Ensure compliance with Health and Safety, Food Hygiene, HACCP, and COSHH regulations
- Promote effective communication between the kitchen and other hotel departments
Requirements
- Proven experience working in a busy food operation within the last 2 years
- NVQ in a kitchen-related qualification
- Thorough knowledge of HACCP, COSHH, and Health & Safety regulations
- Demonstrated experience in a busy kitchen and banqueting environment
- Strong menu planning and development skills
- Ability to work independently with a "can-do" attitude and high level of flexibility
- Punctual, reliable, and self-motivated with a passion for fresh ingredients
