Sous Chef

Responsibilities

• Manage all aspects of daily kitchen operations and the kitchen brigade in the absence of the Head Chef
• Control the preparation and service of all food to ensure high standards are met
• Conduct regular inspections of the kitchen and food preparation areas
• Maintain strict control over food items, including stock rotation and portion control to minimize wastage
• Check all incoming goods against documentation for quality and quantity
• Assist in maintaining food cost percentages within the established budget
• Ensure compliance with Health and Safety, Food Hygiene, HACCP, and COSHH regulations
• Promote effective communication between the kitchen and other hotel departments

Requirements

• Proven experience working in a busy food operation within the last 2 years
• NVQ in a kitchen-related qualification
• Thorough knowledge of HACCP, COSHH, and Health & Safety regulations
• Demonstrated experience in a busy kitchen and banqueting environment
• Strong menu planning and development skills
• Ability to work independently with a "can-do" attitude and high level of flexibility
• Punctual, reliable, and self-motivated with a passion for fresh ingredients
