Punch Knockout Operator

Responsibilities

• Operate knockout machines and manually knock out products into brine tanks
• Manage punch machines and metal detectors, including performing regular needle checks
• Ensure product quality and appearance through diligent monitoring
• Complete data entry and PLC machine setups
• Maintain chemical concentrations for washers and natamycin baths
• Conduct aseptic cheese sampling
• Handle and use cleaning chemicals appropriately
• Stack aging baskets and maintain sanitation/housekeeping standards

Requirements

• High school diploma or GED (or equivalent combination of education and experience)
• Proficiency in computer use for data entry and machine setup
• Ability to read and understand technical instructions
• Knowledge of Good Manufacturing Practices (GMP) and Standard Operating Procedures (SOP)
• Strict compliance with food safety policies and sanitation practices
• Strong organizational, analytical, and communication skills
• Ability to maintain regular attendance for the 10:00 PM - 6:00 AM shift
