Ice Cream Maker

Responsibilities

• Prepare and produce a diverse range of high-quality artisanal ice creams, gelatos, and sorbets daily
• Develop and innovate new recipes highlighting Madeira's regional ingredients and seasonal produce
• Maintain strict adherence to recipe specifications and portion control
• Select, inspect, and prepare high-quality ingredients including fresh fruits and dairy
• Monitor and manage inventory levels and place orders as needed
• Ensure proper storage and rotation of all ingredients to maintain freshness
• Oversee the attractive display and presentation of all offerings
• Maintain impeccable hygiene and cleanliness standards adhering to HACCP regulations
• Operate and maintain specialized ice cream making equipment
• Collaborate with the Pastry Chef and culinary team to integrate offerings with dessert menus
• Work with front-of-house team to ensure seamless guest experience

Requirements

• Working experience in a similar role
• In-depth knowledge of ice cream maker techniques and trends
• Strong understanding of seasonality, local ingredients, and sustainable sourcing
