About the role
Responsibilities
- Prepare and produce a diverse range of high-quality artisanal ice creams, gelatos, and sorbets daily
- Develop and innovate new recipes highlighting Madeira's regional ingredients and seasonal produce
- Maintain strict adherence to recipe specifications and portion control
- Select, inspect, and prepare high-quality ingredients including fresh fruits and dairy
- Monitor and manage inventory levels and place orders as needed
- Ensure proper storage and rotation of all ingredients to maintain freshness
- Oversee the attractive display and presentation of all offerings
- Maintain impeccable hygiene and cleanliness standards adhering to HACCP regulations
- Operate and maintain specialized ice cream making equipment
- Collaborate with the Pastry Chef and culinary team to integrate offerings with dessert menus
- Work with front-of-house team to ensure seamless guest experience
Requirements
- Working experience in a similar role
- In-depth knowledge of ice cream maker techniques and trends
- Strong understanding of seasonality, local ingredients, and sustainable sourcing
