Head Waiter

Responsibilities

• Assist the Restaurant Manager in ensuring efficient food and beverage operations and maintaining high guest-service standards.
• Plan, schedule, and assign staff to relevant sections and monitor time and attendance.
• Manage guest reservations, seating, and communicate specific dietary needs or allergies to the relevant teams.
• Lead and support a multi-cultural team, providing coaching, performance reviews, and operational updates.
• Conduct monthly inventories, assist with ordering, and manage restaurant cost budgets.
• Ensure compliance with all Public Health, Safety, and Security policies, including pest management and sanitation.
• Maintain immaculate cleanliness standards and ensure all equipment is sanitized and properly maintained.
• Deliver exceptional service in accordance with Viking’s STAR Service Standards to ensure guest satisfaction.

Requirements

• Minimum 2 years of experience as a Head Waiter, Assistant Maitre’d, or a similar role in a premium hospitality environment.
• Mandatory previous shipboard experience in a similar position.
• Fluency in both Japanese and English is required for effective communication with guests and crew.
• Minimum age of 21 years old.
• Proven experience leading and motivating multi-cultural teams.
• Physically fit and in good health to meet the demands of shipboard life.
• Ability to work flexibly under pressure with a positive, guest-focused attitude.
