Head Pastry Chef

Responsibilities

• Lead and oversee all pastry operations, including desserts, pastries and baked goods
• Create innovative seasonal menus and new dessert concepts
• Develop and standardise recipes to ensure consistency and quality
• Recruit, train and manage the pastry team
• Prepare team rotas and manage daily staffing levels
• Maintain exceptional standards of presentation, taste and quality
• Manage stock levels, ordering and inventory control
• Monitor food costs and minimise waste in line with budgets
• Ensure pastry equipment is maintained and fully operational
• Maintain high standards of hygiene, cleanliness and food safety
• Work closely with kitchen and front-of-house teams to deliver seamless service
• Stay up to date with pastry trends, techniques and industry developments

Requirements

• Proven experience in a senior pastry role
• Strong leadership and team development skills
• Creativity and passion for modern pastry and desserts
• Excellent knowledge of pastry techniques and presentation
• Strong organisational and time management skills
• Understanding of food cost control and stock management
• Commitment to quality, consistency, and food safety standards
• Ability to thrive in a fast-paced, collaborative environment
