About the role
Responsibilities
- Prepare and present cold menu items including salads, sandwiches, appetizers, and deli platters
- Assemble and maintain salad bars, sandwich stations, and cold buffets
- Slice and portion meats, cheeses, fruits, and vegetables following safety standards
- Adjust recipes and production volumes to meet fluctuating camp population counts
- Maintain accurate temperature and HACCP logs for cold storage and service
- Label, date, and rotate stock using FIFO principles
- Maintain cleanliness and sanitation of workstations and equipment in compliance with WHMIS and HACCP
- Assist with catering events, themed menus, and boxed lunches
- Monitor inventory levels and assist with receiving and organizing deliveries
Requirements
- High school diploma or equivalent
- Minimum 2 years of experience in Garde manger, deli, or cold kitchen preparation
- Knowledge of HACCP, cold-holding requirements, and allergen management
- Food Safe, WHMIS, and First Aid certifications (or willingness to obtain)
- Ability to pass pre-employment drug, alcohol, and FIT testing
- Ability to stand for extended periods and lift up to 50 lbs
Preferred Qualifications
- Post-secondary education in Culinary or Hospitality
- Experience in high-volume camp kitchens, hotels, or large-scale catering
