About the role

Responsibilities

  • Gather, process, analyse and present relevant data on food and beverage department performance
  • Take corrective action and counsel F&B manager and executive chef as necessary
  • Plan standards and specifications for food and beverage merchandise
  • Prepare monthly profit and loss statements for each F&B outlet
  • Introduce improvements in F&B controls, systems, and procedures
  • Conduct spot checks in receiving, stores, food production, and service areas
  • Maintain strict control over liquor consumption, ordering, spoilage, and breakage
  • Coordinate with purchase, accounting, and personnel departments for audits and inventory
  • Maintain liaison with excise for bar licensing
