About the role
Responsibilities
- Gather, process, analyse and present relevant data on food and beverage department performance
- Take corrective action and counsel F&B manager and executive chef as necessary
- Plan standards and specifications for food and beverage merchandise
- Prepare monthly profit and loss statements for each F&B outlet
- Introduce improvements in F&B controls, systems, and procedures
- Conduct spot checks in receiving, stores, food production, and service areas
- Maintain strict control over liquor consumption, ordering, spoilage, and breakage
- Coordinate with purchase, accounting, and personnel departments for audits and inventory
- Maintain liaison with excise for bar licensing
Requirements
- Experience in food and beverage control and analysis
- Ability to manage inventory and audit procedures
- Strong coordination and communication skills
- Adherence to strict grooming and hygiene standards
