Executive Sous Chef - Culinary Academy

Responsibilities

• Develop and implement the vision, mission, and strategy for the Culinary Academy in alignment with the resort's culinary philosophy
• Lead and inspire a diverse team of instructors, sous chefs, and trainers to deliver world-class culinary education
• Design and oversee comprehensive training programs covering classical techniques, modern gastronomy, baking, pastry, and food innovation
• Create specialized leadership development programs for CDPs, sous chefs, and junior chefs
• Partner with HR and Learning & Development to integrate culinary training into employee career paths
• Manage teaching kitchens, demo theatres, and training facilities, ensuring state-of-the-art equipment and best practices
• Develop and maintain SOPs for training kitchens to ensure compliance with HACCP and ISO 22000 standards
• Mentor culinary employees across properties to nurture future leaders and establish apprenticeship programs

Requirements

• 10–15 years of progressive culinary leadership experience in luxury hotels, resorts, or culinary institutions
• Proven expertise in menu development, modern gastronomy, and classical cooking
• Strong background in culinary education, training program design, and talent development
• Professional culinary certification from a recognized institution
• Knowledge of HACCP and ISO 22000 standards
• Excellent leadership, coaching, and communication skills with multicultural teams
