About the role
Responsibilities
- Manage all Food & Beverage operations, including costs, procedures, and quality control
- Oversee back of house labor budgets and ensure appropriate staffing levels
- Meet or exceed budgetary expectations for food, beverage, and labor costs
- Monitor and maintain inventory bi-weekly and develop menu engineering programs
- Supervise, recruit, and train kitchen staff, including Sous Chefs and supervisors
- Ensure strict adherence to corporate mandates, SOPs, safety guidelines, and local health codes
- Collaborate with Corporate Food and Beverage to develop cost-effective specials and menu changes
- Maintain all kitchen equipment and ensure all staff are trained on equipment usage
- Manage administrative tasks including Micros, labor systems, and menu item counts
Requirements
- Minimum 5 years of kitchen management experience
- Proven experience in Fine Dining cooking and management
- Expertise in cost controls, food and beverage costs, and labor costs
- Strong skills in crew training and staff development
- Proficiency in Microsoft Excel, databases, and Micros
- Ability to lift at least 150 lbs and stand for long periods (10–12 hours)
- Ability to work in a fast-paced environment and tolerate extreme heat
