Executive Chef

Responsibilities

• Lead the culinary function through the pre-opening phase, including recruitment, training, and SOP development
• Manage day-to-day culinary operations across multiple outlets including Lana Lusa, Rose Bar, and private dining
• Develop the culinary identity for London, focusing on contemporary Mediterranean-led offerings
• Oversee menu development, recipe specifications, food costings, and kitchen operating standards
• Ensure strict compliance with food safety, hygiene, HACCP, and health and safety regulations
• Build and mentor a high-performing culinary team, including Sous Chefs and Commis Chefs
• Manage the culinary P&L, including food costs, labor productivity, and waste reduction
• Collaborate with the Director of Food & Beverage and Brand Marketing to execute culinary vision and seasonal campaigns

Requirements

• Proven experience as an Executive Chef or senior culinary leader in luxury or boutique hotel environments
• Experience leading multiple culinary concepts or outlets simultaneously
• Previous pre-opening or major restaurant opening experience is highly preferred
• Strong understanding of Portuguese and Mediterranean food culture
• Expertise in menu engineering, food cost control, and labor productivity
• Deep knowledge of UK food safety, HACCP, and statutory requirements
• Strong leadership skills with the ability to build and empower diverse teams
