Commis Chef (Sushi)

Responsibilities

• Prepare sushi rice using traditional Japanese techniques, ensuring proper seasoning and consistency
• Roll, cut, and plate sushi with high precision and attention to presentation standards
• Prepare and portion fresh ingredients, including fish and vegetables, following strict food safety protocols
• Maintain and sanitize knives, kitchen equipment, and the sushi station
• Support senior chefs with food preparation and plating during high-volume service hours
• Collaborate with the culinary team to ensure smooth workflow and timely service
• Learn and apply Japanese culinary terminology and advanced techniques under mentorship

Requirements

• Proficiency in basic sushi preparation techniques, including rice preparation and rolling
• Strong knife skills with the ability to execute precise cuts consistently
• Knowledge of Japanese ingredients and their appropriate applications
• Understanding of food safety and hygiene standards in a commercial kitchen
• Ability to work efficiently in a fast-paced environment
• Excellent attention to detail and commitment to presentation excellence
• Physical ability to stand for extended periods and perform repetitive tasks

Preferred Qualifications

• Prior experience working in a Japanese restaurant or fine dining establishment
• Familiarity with Japanese culinary terminology and cultural food practices
• Experience using sushi-specific equipment and tools
