Responsibilities

  • Define, develop, and evolve the dessert offering
  • Create elegant, contemporary pastry aligned with the Barrière DNA
  • Supervise all pastry production and participate actively in production
  • Organize daily production, mise en place, and client orders
  • Manage costs including food cost, productivity, and labor
  • Ensure strict compliance with HACCP standards and cleanliness
  • Recruit, train, and manage the pastry brigade
  • Develop team skills and ensure knowledge transmission

Requirements

  • Training in Pastry
  • At least 6 years of confirmed experience in high-end or luxury pastry
  • Strong product culture and attention to detail
  • Mastery of management fundamentals (costs, stocks, organization)
  • Leadership skills and ability to work under stress
  • Strong interpersonal and pedagogical skills
