About the role
Responsibilities
- Define, develop, and evolve the dessert offering
- Create elegant, contemporary pastry aligned with the Barrière DNA
- Supervise all pastry production and participate actively in production
- Organize daily production, mise en place, and client orders
- Manage costs including food cost, productivity, and labor
- Ensure strict compliance with HACCP standards and cleanliness
- Recruit, train, and manage the pastry brigade
- Develop team skills and ensure knowledge transmission
Requirements
- Training in Pastry
- At least 6 years of confirmed experience in high-end or luxury pastry
- Strong product culture and attention to detail
- Mastery of management fundamentals (costs, stocks, organization)
- Leadership skills and ability to work under stress
- Strong interpersonal and pedagogical skills
