About the role
Responsibilities
- Prepare, present, design, and serve high quality rotational menus
- Supervise kitchen staff productivity and compliance with health, safety, and quality policies
- Lead training, development, and mentoring of employees
- Ensure food preparation follows FOODSAFE and HACCP methods
- Manage labour and chemical resources effectively
- Conduct bi-weekly inventory
- Communicate equipment maintenance issues to management
- Manage dietary restrictions, including allergies, vegan, and vegetarian requirements
Requirements
- At least 5 years of experience in the hospitality or food service industry
- At least 5 years of experience as a Chef in hotels, resorts, restaurants, or remote lodges
- Proficiency in Microsoft Excel, Microsoft Word, GFS, and Outlook
- Extensive knowledge of menu costing, recipe card implementation, and wage control
- Strong background in Hot Kitchens, Cold Kitchens, Pastry/Bakery, Butchery, and Banquets
- Ability to pass drug and alcohol testing and a fitness assessment
