About the role
Responsibilities
- Oversee day-to-day kitchen operations, including food ordering and menu planning
- Prepare, present, design, and serve high-quality menu items
- Supervise kitchen staff productivity and compliance with health, safety, and quality policies
- Lead training, development, and mentoring of employees
- Ensure food preparation follows FOODSAFE and HACCP methods
- Manage labor and resources effectively
- Conduct weekly inventory and ordering
- Perform monthly self-audits for Health & Safety and Food Safety
- Manage weekly and monthly financial reporting
Requirements
- At least 5 years of experience in the hospitality or food service industry
- At least 5 years of experience as a Chef in hotels, resorts, restaurants, or remote lodges
- SafeCheck advanced food safety or HACCP certification
- Knowledge of menu costing, recipe implementation, and wage control
- Proficiency in Microsoft Excel, Word, GFS, and Outlook
- Strong background in Hot Kitchens, Cold Kitchens, Pastry/Bakery, Butchery, and catering
Preferred Qualifications
- Journeyperson or interprovincial Red Seal Certificate
