Chef de Partie Sushi

Responsibilities

• Supervise and manage the Galley Team for all sushi and Asian food preparation on Ocean vessels
• Perform daily preparation including filleting fish and preparing sushi to fill cases and guest orders
• Maintain proper product rotation in chillers to minimize wastage
• Assist with menu planning, development, and experimentation with new sushi recipes and trends
• Oversee the service line during meal hours to ensure compliance with Viking STAR Service Standards
• Prepare food requisitions and monitor daily deliveries to ensure accuracy and prevent overstocking
• Ensure all food outlets and displays adhere to Public Health and Sanitary Policies

Requirements

• Minimum of 5 years of sushi experience, including at least 2 years as a Chef de Partie Sushi or similar role
• Fluency in both English and Japanese for interpreting menus and recipes
• Proven experience leading multi-cultural teams in a premium hospitality environment
• Ability to physically lift 70+ lbs (31kg) on a daily basis
• Must be at least 21 years of age
• Ability to work a minimum of eleven hours a day, seven days a week
