About the role
Responsibilities
- Prepare high-quality sushi dishes according to recipes, quality standards, and presentation guidelines
- Lead and manage the sushi section during daily operations and service hours
- Supervise, guide, and support junior kitchen staff to ensure consistency and proper preparation
- Ensure freshness and proper handling of seafood, vegetables, and other ingredients
- Maintain cleanliness, organization, and sanitation of the sushi station at all times
- Monitor stock levels, minimize wastage, and assist with inventory control and storage procedures
- Support menu preparation and the development of new dishes
Requirements
- Proven experience in sushi preparation or Japanese cuisine
- Previous leadership experience within a professional kitchen environment
- Strong knowledge of food safety, hygiene, and sanitation standards
- Excellent knife skills and attention to detail
- Ability to work effectively in a fast-paced environment
- Flexibility to work shifts, weekends, and holidays
