About the Company

Villa Pétrusse is an iconic 19th-century 5-star residence and member of Relais & Châteaux located in the heart of Luxembourg City. The property features Le Lys, a gastronomic restaurant offering elegant and inventive cuisine, and Brasserie Ciel, a relaxed atmosphere under a large glass roof.

Responsibilities

• Ensure mise en place, supply management, and efficient dessert service
• Participate in the creation of pastries and desserts for various restaurants in collaboration with the Pastry Chef
• Monitor product freshness and quality
• Manage daily stock using FIFO rules, inventories, and ordering
• Propose new ideas in coordination with the Pastry Chef and Executive Chef
• Maintain cleanliness of the workspace
• Control and implement hygiene and safety standards (HACCP)
• Manage food resources to minimize waste
• Verify the quality and quantity of delivered goods
• Train and supervise team members including commis and interns

Requirements

• Passion for pastry making
• Strong team spirit and dynamism
• Ability to adapt to changing environments
• Creative mindset
• Good knowledge of HACCP methods
• Knowledge of basic cooking and preparation techniques
• Culinary training (CAP / BEP / BAC PRO)
• Strong organizational skills
• Successful experience in a similar establishment
