Chef De Partie - Halwai

Responsibilities

• Lead and supervise the halwai (confectionery) section, ensuring all sweets and desserts are prepared to the highest standards and property recipes
• Mentor and train junior chefs and apprentices to foster a collaborative kitchen environment
• Develop and innovate new halwai recipes and dessert offerings while maintaining consistency
• Ensure meticulous attention to detail in food preparation, presentation, and plating for à la carte and buffet service
• Maintain rigorous food safety, hygiene, and sanitation protocols within the confectionery section
• Manage inventory, portion control, and cost efficiency at the halwai station
• Communicate effectively with the broader kitchen team and respond proactively to guest feedback

Requirements

• Culinary diploma or certification in pastry arts, confectionery, or an equivalent professional qualification
• Minimum 5+ years of professional experience as a Chef De Partie or similar senior kitchen role
• Specialized expertise in halwai and Indian confectionery
• Advanced knowledge of traditional and contemporary halwai techniques, ingredients, and flavor profiles
• Proven ability to work under pressure in a fast-paced, high-volume kitchen environment
• Strong leadership and mentoring skills with experience developing junior staff
• Proficiency in food safety standards, kitchen hygiene protocols, and inventory management
