About the role
Responsibilities
- Control all aspects of daily kitchen operations and the kitchen brigade in the absence of the Head Chef
- Oversee the preparation and service of food to ensure it meets established quality standards
- Maintain strict control over food items, including portion control, wastage reduction, and stock rotation
- Inspect kitchen and food preparation areas regularly to ensure cleanliness and safety
- Check all incoming goods against documentation for quality and quantity
- Assist in maintaining food cost percentages within the allocated budget
- Comply with all Health and Safety, Food Hygiene, and Food and Hygiene Regulations
- Promote effective communication between the kitchen and other hotel departments
Requirements
- NVQ in a kitchen-related qualification
- Proven experience working in a busy food operation within the last 2 years
- Thorough knowledge of HACCP and COSHH protocols
- Strong understanding of Health and Safety (H&S) regulations
- Ability to work independently and manage tasks in a fast-paced environment
- A positive, "can-do" attitude with a passion for fresh ingredients and menu development
Preferred Qualifications
- Experience in a banqueting operation
- Ability to build rapport quickly with senior management
