Chef De Cuisine

Responsibilities

• Oversee and manage all kitchen operations to ensure excellence in a fine dining setting
• Design, develop, and execute menus inspired by authentic Italian and Mediterranean cuisines using seasonal and premium ingredients
• Ensure absolute consistency in food quality, presentation, and flavor in line with luxury standards
• Lead, train, and motivate the kitchen brigade to maintain high performance
• Enforce strict adherence to food safety, hygiene, and HACCP standards
• Manage food cost control, inventory, ordering, and waste reduction to meet budget targets
• Collaborate with the Executive Chef on menu innovation, tasting menus, and special culinary events
• Work closely with front-of-house teams to ensure seamless service delivery and guest satisfaction

Requirements

• Proven experience as Chef de Cuisine or Senior Sous Chef in a luxury Italian & Mediterranean fine dining restaurant
• Strong mastery of Italian and Mediterranean cooking techniques, including pasta, seafood, grills, and regional specialties
• Creative mindset with exceptional attention to detail and plating presentation
• Excellent leadership, coaching, and team management skills
• Solid knowledge of food costing, menu engineering, and kitchen administration
• Ability to perform under pressure in a refined, fast-paced environment

Preferred Qualifications

• Formal culinary qualifications from a recognized institute
