About the role
Responsibilities
- Manage end-to-end bakery and pastry production including bread and desserts
- Supervise and mentor night-shift bakery staff
- Prepare goods from scratch following approved recipes and menus
- Maintain stock levels of fresh and visually appealing baked goods
- Ensure compliance with Food Safety Act, FOODSAFE, and HACCP principles
- Monitor product rotation, labeling, and storage
- Collaborate with culinary leadership to align output with guest demand
Requirements
- Culinary education or designation with a specialty in baking
- Food Safety certification
- Minimum 4 years of professional baking experience in high-volume environments (hotel, camp, or institutional)
- Experience in large-batch production and scratch baking
- Prior supervisory or lead-hand experience
- Ability to stand for extended periods and lift up to 35 pounds
