Associate Director of Food & Beverage

Responsibilities

• Oversee strategic direction and operational management of all food and beverage outlets
• Develop and implement F&B strategies aligned with Fairmont brand standards
• Manage P&L responsibilities to ensure profitability and guest satisfaction
• Lead, mentor, and develop the F&B management team and staff
• Ensure compliance with health, safety, and hygiene regulations
• Collaborate with the Executive Chef on innovative menu design
• Oversee budgeting, forecasting, and cost control measures
• Manage vendor relationships and procurement processes
• Conduct regular training programmes for F&B staff
• Monitor guest feedback and implement corrective actions
• Coordinate with Sales and Marketing for promotional offerings
• Maintain detailed records of inventory and wastage management

Requirements

• Bachelor's degree in Hotel Management or related discipline
• 8-10 years of progressive F&B operations management experience in luxury hospitality
• Proven track record of P&L management and financial acumen
• Strong knowledge of food safety and hygiene regulations
• Excellent leadership and people management skills
• Proficiency in F&B management systems and POS software
• Exceptional communication and interpersonal skills
• Certification in Food Safety Management or Hospitality Management preferred
• Experience with international luxury hotel brands
• Expertise in menu development and culinary trends
• Experience managing multiple F&B outlets simultaneously
• Strong vendor negotiation and procurement skills
• Knowledge of revenue management and pricing optimization
