Assistant Stewarding Director - Catering & Banquets

Responsibilities

• Support the Executive Director in overseeing kitchen cleanliness, sanitation, and hygiene standards in accordance with HACCP protocols.
• Schedule and conduct daily kitchen inspections to ensure compliance with health and fire department regulations.
• Supervise the maintenance of all stationary and portable banquet equipment.
• Manage inventory control and procure equipment and supplies within budget for Catering and Culinary departments.
• Handle administrative tasks, including staff scheduling and assisting with budgeting and forecasting for stewarding operations.
• Coordinate with Food & Beverage leaders to align cleaning strategies with business goals and support banquet plate-ups and setup/teardown.

Requirements

• Minimum of 10 years of leadership experience in a 5-star hotel or integrated resort.
• At least 8 years of specialized experience in stewarding operations across multi-outlet environments.
• Completion of secondary school (higher academic credentials are an asset).
• Strong knowledge of cleaning chemicals, kitchen equipment, and food hygiene standards.
• Proficiency in MS Office and hotel operating systems.
• Fluency in English; additional languages are a plus.
• Ability to work rotational shifts and perform physically demanding tasks, including lifting heavy equipment.
• Must be at least 21 years of age due to regulatory requirements.
