Assistant Sous Chef

Responsibilities

• Assist the Chef with overall culinary direction and team development while promoting a collaborative work environment
• Supervise daily operations and the execution of all menu categories and recipes to ensure quality and efficiency
• Prepare meals across various dining levels, including Quick Service, Full Service, Banquet, and Buffet
• Recreate Disney recipes and adapt them to meet specific Guest dietary restrictions and food allergies
• Maintain high standards of food safety, cleanliness, and station organization

Requirements

• Minimum 4 years of recent line cook experience (including grill and sauté) OR a culinary certificate with 2 years of recent line cook experience
• Proven experience working all kitchen stations and proficiency in multiple cooking techniques
• Strong knife skills and knowledge of basic butchering techniques
• Thorough understanding of HACCP, food handling procedures, and proper food temperatures
• Ability to follow complex recipes and perform recipe conversions
• Knowledge of kitchen equipment, tools, and ingredients

Preferred Qualifications

• ServSafe certification
• Prior experience in Fine Dining, Catering, or Events kitchens
• Proven experience as a Lead Line Cook
• Bilingual communication skills
