Responsibilities
- Manage the kitchen brigade (recruitment, training, scheduling, productivity)
- Represent the Head Chef in their absence to management and other departments
- Supervise culinary production following group standards
- Collaborate with Pastry and Front of House teams to ensure gastronomic consistency
- Oversee product orders and control the conformity of received goods
- Participate in recipe technical sheet development and culinary innovation
- Analyze and manage costs, including ratios and technical sheets
- Ensure high service quality standards (LQA)
- Maintain and monitor the proper use of kitchen equipment and storage
Requirements
- CAP/BEP/BTH Cuisine diploma
- Minimum 10 years of experience in luxury hospitality
- Strong leadership and managerial skills
- Ability to manage stress during high activity periods
- Rigor, organization, and autonomy
- Creative and precise mindset
