Assistant General Manager - Italian & Seafood

Responsibilities

• Execute daily shifts following company SOPs to ensure consistency and Forbes 5-Star service standards
• Manage operational costs, including labor scheduling, inventory, and cash handling, in support of the General Manager
• Develop and implement business strategies and promotions to maximize revenue and seat utilization
• Coordinate with the kitchen team regarding menu availability, dietary requirements, and pacing
• Oversee reservations, waitlists, and floor plans to optimize guest flow and turn times
• Supervise, direct, and coach supervisors, captains, and service teams to achieve departmental goals
• Handle guest complaints and service recovery promptly to ensure high levels of satisfaction
• Provide personalized service to VIP and media guests in coordination with PR and VIP services
• Maintain strict adherence to health, safety, and food hygiene standards

Requirements

• 2–3 years of leadership experience in fine dining (e.g., Assistant Manager or Restaurant Manager)
• Background in luxury 5-star hotels or restaurants delivering exceptional dining experiences
• Experience in Michelin-recognized or Gault Millau restaurants preferred
• Strong knowledge of cuisine and wine; WSET 2 certification is preferred
• Fluent in English and at least one other European language
• Proficient in MS Office and POS software
• Ability to remain calm under pressure and demonstrate hands-on leadership
• Bachelor’s degree in hospitality management is an advantage
