Assistant General Manager - Italian & Seafood

Responsibilities

• Execute daily shifts following company SOPs to ensure consistency and Forbes 5-Star service standards
• Manage cost-effective operations, including labor scheduling, inventory, and budget support
• Develop and implement business strategies to maximize revenue and seat utilization
• Coordinate with the kitchen team regarding menu availability, dietary needs, and pacing
• Oversee reservations, floor plans, and guest flow to optimize turn times
• Supervise, direct, and coach supervisors, captains, and service teams
• Handle guest complaints and service recovery promptly to ensure satisfaction
• Provide personalized service to VIP and media guests

Requirements

• 2-3 years of leadership experience in fine dining (Assistant Manager or Restaurant Manager level)
• Experience in luxury 5-star hotels or Michelin/Gault Millau recognized restaurants
• Strong knowledge of Italian cuisine and wine; WSET 2 certification preferred
• Fluency in English and at least one other European language
• Proficiency in MS Office and POS software
• Strong understanding of budgeting, allergen management, and food safety standards
• Ability to remain calm and organized under high-pressure operational demands
