Job Description
Responsibilities
- Prepare own inventory list for assigned station
- Fill in for other chefs when absent; maintain basic overall culinary knowledge
- Ensure all recipes and plating guides are followed at all times
- Provide Executive Sous Chef with daily market list and control goods received to ensure quality and quantity
- Share recipes and costing as required
- Assist and propose special food promotions and events to Executive Chef
- Communicate with Outlet Supervisors daily and explain all food items sent to outlets
- Control food wastage while maintaining quality
- Recommend changes in systems and procedures for efficiency and service improvement
- Maintain records/documentation as required
- Ensure intradepartmental communication through log books and memoranda
- Adhere to operational standards and ensure proper grooming at all times
- Attend scheduled training classes
- Cooperate and show respect within the team and department
- Possess daily awareness of hotel activities and product knowledge
- Check and organize buffets, food labelling, and quality before and during service times
- Attend daily briefings and communication meetings
- Inspect equipment at end of shift; ensure safety and cleanliness
- Share information for next shift supervisor for seamless operation
- Share skill and knowledge with all employees
- Apply HACCP as per hotel standard
- Assist guests in understanding dishes and recommend specialties/promotions
- Refill buffets and maintain food standards
- Create a positive atmosphere among the brigade
- Check food quality leaving the kitchen
Requirements
- Diploma or degree in vocational hospitality
- 2–3 years experience in 4–5 star hotel
- Culinary knowledge
- Food safety/HACCP
- Teamwork
