Job Description

Responsibilities

  • Oversee daily food production and maintain top product quality in assigned outlet, as per hotel standards.
  • Ensure adherence to standard recipes and plating guides at all times.
  • Provide Sous Chef with daily market lists and personally control goods received for quality and quantity.
  • Submit recipes and costing to Executive Chef as required.
  • Assist in and propose special food promotions, events, and other food-related activities.
  • Support the Executive Chef in developing new cuisine concepts.
  • Implement and maintain standards of food quality, preparation, and presentation.
  • Participate in menu planning and costing.
  • Ensure optimal physical upkeep and maintenance of kitchen equipment and utensils.
  • Organize work assignments, schedules, and vacation planning within kitchen sections.
  • Guarantee high quality of all raw materials received and used for food preparation.
  • Communicate daily with Outlet Supervisors to clarify food items sent to outlets.
  • Recommend changes in systems and procedures for improved efficiency and service quality.
  • Assure prompt and accurate service by kitchen staff to maximize customer satisfaction.
  • Ensure full compliance by all employees in department with organizational policies.
  • Suggest menu changes when necessary.
  • Maintain sufficient availability of raw ingredients through effective planning, requisitioning, and storage.
  • Perform duties as per operational standards.
  • Maintain proper grooming at all times.
  • Attend training classes as scheduled.
  • Cooperate and show respect within the team and across departments.
  • Stay informed of daily activities and have product knowledge of all hotel facilities.

Requirements

  • Vocational diploma/degree in hospitality
  • 7–10 years' experience in 4–5 star hotels
