Head Chef

Responsibilities

• Hire, coach, counsel and conduct performance evaluations of staff
• Develop, train and mentor staff and act as a resource
• Open production kitchen, overview day's production
• Designate production teams and team leaders
• Determine production staff priorities
• Supervise staff for efficiency, quality, cleanliness, organization
• Lead a team during production
• Ensure food quality and timeliness
• Coordinate with purchasing manager for orders and product needs
• Create and manage daily production sheets and inventory
• Supervise storage, cleanliness, and sanitation
• Communicate with chef and BOH team for food execution
• Attend meetings and training sessions
• Uphold company emergency and safety procedures
• Travel as needed to different properties/venues

Requirements

• Minimum three years’ experience as Head Chef or Kitchen Manager (large production units or central kitchen sites)
• Expertise in International and Lebanese cuisines
• Supervisory experience in kitchen/culinary department
• In-depth knowledge of kitchen methods, procedures, and standards
• HACCP and Food Safety certification
• Ability to communicate and demonstrate company quality mission
• Capable of standing for extended periods, lifting/carrying up to 50 lbs (up to 1,000 lbs with rolling cart)
• Ability to manage customers under pressure, with patience and diplomacy
• Ability to withstand kitchen temperatures (0-120 degrees)
• Ability to visually inspect, taste, and smell food for quality
• Flexible schedule to meet business needs
• Experience analyzing and controlling food cost and P&L

• Multisite supervision experience
